Broccoli, Bacon & Stilton Soup
Finish the day with a bowl of richly flavoured soup and your favourite bread.

| Chop the broccoli into florets (individual heads, and don't use the tough stalks) Melt butter in large pan and cook the onion, garlic, leek and bacon until soft but not coloured Add broccoli and potato, pour over warm stock. Cover and simmer 20-30 minutes until vegetables are tender. Cool slightly and pour in batches in blender and process until smooth. Pour soup back in pan, add milk, cream, lemon zest, lemon juice, and seasoning. Reheat gently; add cheese at the last minute. Do not boil. Ladle the soup into warm bowls, drizzle with a little cream and a generous grinding of black pepper. |
